Ingredients
  

  • 1 can (15 oz), drained and rinsed Chickpeas
  • 4 cups, fresh Spinach
  • 1 large, juiced Lemon
  • 3 cloves, minced Garlic
  • 1/2 teaspoon Red Pepper Flakes
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions
 

  • Prepare Ingredients - Gather all the ingredients - chickpeas, spinach, lemon, garlic, red pepper flakes, olive oil, salt, and black pepper. Rinse and drain the chickpeas, chop the garlic, juice the lemon, and measure out the seasonings.
  • Saute Garlic and Red Pepper Flakes - In a skillet over medium heat, heat olive oil. Add minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant. - Be careful not to burn the garlic as it can turn bitter. Adjust the red pepper flakes based on your spice preference.
  • Add Chickpeas and Spinach - Stir in the drained and rinsed chickpeas with the garlic mixture. Add fresh spinach gradually, stirring until wilted.
  • Squeeze Lemon Juice - Squeeze the juice of one large lemon into the skillet, stirring to combine and evenly distribute the citrusy flavor.
  • Season and Serve - Season the skillet with salt and black pepper to taste. Stir well and serve hot as a main dish or a flavorful side.
