Equipment

  • Grill
  • Large mixing bowl
  • cutting board
  • Knife
  • Measuring cups and spoons
  • Skewers

Ingredients

  • 1 cup Trader Joe's Pineapple Teriyaki sauce
  • 1 pound large shrimp
  • 1 whole, cut into chunks fresh pineapple
  • 1 large, cut into chunks red onion
  • 8 bamboo skewers

Instructions

  • Soak your bamboo skewers - Soak the bamboo skewers in a shallow dish or bowl filled with water for at least 30 minutes before using them. This will prevent the skewers from burning on the grill.
  • Preheat your grill - Heat your grill to medium-high heat (around 375 to 400 degrees F). - You can also use a grill pan or indoor grill if you don't have an outdoor grill available.
  • Prepare the Shrimp and Veggies - In a large mixing bowl, combine the raw shrimp, pineapple chunks, and red onion. Pour the Trader Joe's Pineapple Teriyaki Sauce over the shrimp and veggies, and toss to coat everything evenly. - Make sure the pineapple and onion chunks are roughly the same size for even cooking. You can also use chicken or beef instead of shrimp if you prefer.
  • Skewer your shrimp and veggies - Thread 1 shrimp, 1 piece of pineapple and 1 piece of red onion onto each skewer. Repeat until all the skewers are filled. - Make sure to alternate the shrimp, pineapple, and onion for an even distribution of flavors.
  • Grill the Skewers - Place the skewers on the preheated grill and cook for 3-4 minutes on each side, until the shrimp are pink and no longer translucent. - Be careful not to overcook the shrimp or they will become tough. You can also brush some extra teriyaki sauce over the skewers while grilling for extra flavor.
  • Serve and Enjoy! - Once the skewers are cooked, transfer them to a serving platter and garnish with a sprinkle of chopped cilantro and sliced scallions. Serve warm with extra teriyaki sauce on the side, if desired. - These skewers make a perfect appetizer or main course for any summer gathering. You can also serve them with some rice or noodles to make them a more substantial meal.
