Tandoori Cauliflower Gnocchi with Mint Yogurt Sauce

Ingredients
  

  • 1 package (16 oz) cauliflower gnocchi
  • 2 tablespoon tandoori seasoning
  • 2 tablespoon olive oil
  • 1/2 cup Greek yogurt
  • 1/4 cup fresh mint
  • 1 tablespoon lemon juice

Instructions
 

  • Prepare the Cauliflower Gnocchi - Preheat the oven to 425°F (220°C). Spread the cauliflower gnocchi on a baking sheet lined with parchment paper. Drizzle with olive oil and season the gnocchi generously with tandoori seasoning. Toss to coat and spread gnocchi in an even layer. Bake in the oven for 20 to 25 minutes, or until crispy and golden brown. Remove from the oven and let it cool for a few minutes. - Make sure to give the gnocchi space on the baking sheet to allow for even cooking. You also want to avoid overcrowding the baking sheet, which can lead to soggy gnocchi.
  • Make the Mint Yogurt Sauce - In a mixing bowl, whisk together yogurt, mint, lemon juice, and salt until smooth. Taste and adjust seasonings as necessary. - The mint yogurt sauce can be made ahead of time and kept in the refrigerator until ready to serve. The longer it sits, the more the flavors meld together.
  • Plate and Serve - Once the cauliflower gnocchi has cooled slightly, transfer to a serving dish and drizzle with mint yogurt sauce. Serve immediately and enjoy! - For a complete meal, serve with a side salad or steamed vegetables. Leftover gnocchi can be stored in an airtight container in the refrigerator for up to 3 days.
