Starfruit and Mint Salad with Ginger-Lime Dressing: A Refreshing Symphony of Tropical Flavors

Ingredients
  

  • 2 medium sized Starfruit
  • 1 cup Fresh mint leaves
  • ½ cup Coconut flakes
  • 1 Tbsp, grated Ginger
  • 2 Tbsp Lime juice
  • 2 Tbsp Olive oil
  • 1 Tbsp Honey
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Prepare the dressing - In a small bowl, whisk together the grated ginger, lime juice, olive oil, honey, salt, and black pepper. - If you prefer a spicier dressing, you can add more ginger or replace it with wasabi paste.
  • Wash the starfruit and mint - Wash the starfruit and mint leaves with cool water and pat dry. -
  • Slice the starfruit - Slice the starfruit into thin slices and discard the ends. - Make sure to remove any seeds from the starfruit as they can be tough to eat.
  • Chop the mint leaves - Chop the mint leaves into small pieces and add them to a mixing bowl. -
  • Add the starfruit and coconut flakes to the mixing bowl - Add the sliced starfruit and coconut flakes to the mixing bowl with the chopped mint leaves. - If you don't like coconut, you can leave it out or replace it with slivered almonds.
  • Drizzle the dressing over the salad - Pour the dressing over the salad and toss gently to combine. -
  • Serve and enjoy! - Arrange the salad in a serving dish and enjoy as a refreshing side dish or a light meal. - For an extra tropical touch, you can garnish the salad with some sliced kiwi or pineapple. It pairs well with grilled chicken or fish.
