Ingredients
  

  • 8 slices Sourdough bread
  • 1 cup, grated Sharp Cheddar cheese
  • 1/4 cup, diced Pimentos
  • 2-3, diced Jalapeno peppers
  • 1/4 cup Mayonnaise
  • 1 tsp Hot sauce
  • 2 tbsp Butter

Instructions
 

  • Prep the sandwich ingredients - Grate the sharp cheddar cheese and dice the pimentos and jalapeno peppers. Mix the cheese, pimentos, jalapeno peppers, mayonnaise, and hot sauce in a bowl until well combined. - Wear gloves when handling the jalapeno peppers to avoid getting their oils on your skin. Make sure the ingredients are evenly mixed to ensure a balanced flavor in every bite.
  • Assemble the sandwiches - Take two slices of sourdough bread and spread butter on one side of each slice. Place about 1/4 cup of the cheese mixture on the non-buttered side of one slice, and top with the other slice, buttered side up. Repeat until you have used all the bread slices and cheese mixture. - Make sure the cheese mixture is evenly distributed so that every bite has a good amount of cheese and spice. You can add lettuce, tomato, or bacon for extra flavor and texture.
  • Cook the sandwiches - Heat a non-stick skillet over medium-high heat. Place one or two sandwiches in the skillet, and cook for 2-3 minutes on each side, until the bread is golden brown and the cheese is melty. Repeat with the remaining sandwiches. - Be careful not to burn the bread or the cheese. You can also use a panini press or a griddle to cook the sandwiches. Serve hot and enjoy!
