Ingredients
  

  • 1 lb Carrots
  • 2 tbsp Olive Oil
  • 2 tbsp Za'atar
  • 1/2 tsp Salt
  • 4 oz Goat Cheese
  • 1/4 cup Heavy Cream

Instructions
 

  • Preheat the oven - Preheat the oven to 400°F (200°C).
  • Prep the carrots - Wash and peel the carrots, and then slice them diagonally into thin strips. - Make sure to slice the carrots thinly, so they cook evenly and develop a nice crispy exterior.
  • Mix the spices - In a mixing bowl, combine the sliced carrots, olive oil, za'atar, and salt. Mix well to ensure that the carrots are evenly coated with the spice mixture. - If you don't have za'atar, you can make your own blend by combining thyme, sesame seeds, and sumac.
  • Roast the carrots - Spread the seasoned carrots out on a parchment-lined sheet pan, making sure they're in a single layer. Roast in the preheated oven for 25-30 minutes, or until they're slightly caramelized and crispy around the edges. - Make sure not to overcrowd the pan, or the carrots will steam instead of roast. If necessary, use two sheet pans to ensure that the carrots are in a single layer.
  • Prepare the whipped goat cheese - In a mixing bowl, whisk together the goat cheese and heavy cream until light and fluffy. Spoon the whipped goat cheese over the roasted carrots before serving. - If you don't have heavy cream, you can substitute with sour cream or plain Greek yogurt. You can also add a bit of honey to the whipped goat cheese for a touch of sweetness.
  • Serve and enjoy! - Transfer the roasted carrots to a serving dish and top with the whipped goat cheese mixture. Serve immediately and enjoy! - This dish can also be served at room temperature, making it a great option for a party or gathering. You can also serve it with a side of pita bread for dipping in the whipped goat cheese.
