Ingredients
  

  • 8 ounces Udon Noodles
  • 8 ounces Oyster Mushrooms
  • 4 cloves Garlic
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Sesame Oil
  • 2 stalks Green Onions
  • 1 tablespoon Sesame Seeds
  • 1/4 teaspoon Red Pepper Flakes
  • 1/4 cup Vegetable Broth

Instructions
 

  • Cook the Udon Noodles - Bring a large pot of water to a boil. Add the udon noodles and cook according to the package instructions until al dente. Drain the noodles using a strainer and rinse them with cold water to stop the cooking process. Set aside.
  • Sauté the Oyster Mushrooms and Garlic - Heat a little oil in a large skillet or wok over medium heat. Add the oyster mushrooms and sauté until they are tender and slightly golden, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant. Remove from heat and set aside.
  • Prepare the Sauce - In a small bowl, whisk together the soy sauce, sesame oil, and vegetable broth until well combined.
  • Combine and Toss - Return the cooked udon noodles to the pot. Pour the prepared sauce over the noodles and toss them gently to coat. Add the sautéed oyster mushrooms and garlic, along with the chopped green onions. Toss everything together until well combined.
  • Serve and Garnish - Divide the garlicky udon noodles among serving bowls. Sprinkle with sesame seeds and red pepper flakes for an extra burst of flavor and heat. Enjoy it hot!
