Crispy Spring Rolls with Sweet Chili Dipping Sauce

Ingredients
  

  • 12 Spring roll wrappers
  • 1/2 pound Ground pork
  • 1 cup, chopped Shiitake mushrooms
  • 1 cup, shredded Cabbage
  • 1/2 cup, julienned Carrots
  • 2 cloves, minced Garlic
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 1 tablespoon Cornstarch

Instructions
 

  • Prepare the Filling - In a wok or large skillet, heat sesame oil over medium-high heat. Add minced garlic and cook until fragrant, then add ground pork. Cook until browned, breaking up the meat with a spoon. Stir in chopped shiitake mushrooms, shredded cabbage, and julienned carrots. Cook until the vegetables are tender-crisp. Season with soy sauce and adjust seasoning to taste. - Feel free to customize the filling by adding your favorite vegetables or protein choices. For a vegetarian version, swap the ground pork with crumbled tofu or cooked lentils.
  • Assemble the Spring Rolls - Place a spring roll wrapper on a clean surface with a corner pointing towards you. Spoon filling onto the wrapper and fold the bottom corner over the filling. Roll halfway, then fold the sides towards the center. Continue rolling tightly, sealing the edge with a bit of water. Repeat with the remaining wrappers and filling. - To prevent the spring roll wrappers from drying out, cover them with a damp towel while assembling each roll. Ensure the rolls are tightly packed to prevent them from unraveling during frying.
  • Fry the Spring Rolls - In a deep-frying pan, heat oil over medium-high heat. Carefully place the spring rolls seam side down into the hot oil, in batches to avoid overcrowding. Fry until golden and crispy, turning occasionally for even browning. Remove and drain on paper towels. - Maintain the oil temperature around 350°F (180°C) for perfectly crispy spring rolls. Avoid overcrowding the pan, as it can lower the oil temperature and result in soggy rolls.
  • Make the Sweet Chili Dipping Sauce - In a small bowl, combine sweet chili sauce with a splash of soy sauce and a squeeze of lime juice. Adjust the sweetness and spiciness to your preference. - You can customize the dipping sauce by adding ingredients like minced garlic, grated ginger, or a sprinkle of red pepper flakes for extra flavor. Taste and adjust the seasoning before serving.
  • Serve and Enjoy - Serve the crispy spring rolls hot with the sweet chili dipping sauce on the side. Enjoy the crunchy exterior and flavorful filling with a kick of sweetness and heat. - Garnish the spring rolls with sesame seeds or chopped scallions for a pop of color and added texture.
