Creamy Avocado Pesto Pasta with Cherry Tomatoes and Feta Cheese

- 1 large or 2 small Avocado
- 2 Garlic Cloves
- 1/2 cup Fresh Basil Leaves
- 1/4 cup Pine Nuts
- 1/4 cup Grated Parmesan Cheese
- 1/4 cup Olive Oil
- To taste Salt
- To taste Black Pepper
- 12 oz Pasta
- 1 cup, halved Cherry Tomatoes
- 1/2 cup, crumbled Feta Cheese
- 1/2 cup, pitted and sliced Kalamata Olives
Cook the pasta - Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.
Make the avocado pesto - In a food processor, combine the avocado, garlic, basil, pine nuts, Parmesan cheese, olive oil, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.
Toss the pasta with the avocado pesto and add the toppings - In a large bowl, toss the cooked pasta with the avocado pesto until well coated. Add the cherry tomatoes, feta cheese, and olives to the bowl, and toss gently to combine.
Serve and enjoy! - Transfer the pasta to a serving dish and garnish with additional Parmesan cheese and fresh basil leaves, if desired. Serve the pasta immediately and enjoy!
