  • Preheat the oven - Preheat your oven to 425°F (220°C). It's essential to preheat the oven so that the Yorkshire puddings can start baking in a hot environment, resulting in a crisp exterior and a beautifully risen interior.
  • Prepare the batter - In a mixing bowl, whisk together the all-purpose flour, milk, eggs, and salt until you have a smooth batter. Make sure there are no lumps before proceeding to the next step. If you prefer a lighter texture, you can beat the egg whites separately until they form stiff peaks and then fold them gently into the batter.
  • Rest the batter - Allow the batter to rest at room temperature for about 30 minutes. Resting the batter helps the glutens relax and allows for a lighter, more tender Yorkshire pudding. During this time, you can work on other components of your meal.
  • Heat the drippings - Place the vegetable or beef drippings in the Yorkshire pudding tin and put it into the preheated oven. Allow the drippings to heat for about 5-7 minutes until sizzling hot, ensuring that the tin is well coated with the drippings.
  • Pour the batter into the tin - Carefully take the hot tin out of the oven and pour the batter into the individual compartments, filling each about halfway. The sizzling hot drippings will create an immediate reaction, resulting in the puddings rising beautifully.
  • Bake the Yorkshire puddings - Place the tin back into the oven and bake the Yorkshire puddings for about 20-25 minutes, or until they are puffed up and golden brown. Avoid opening the oven door during baking as the puddings may collapse. Have a peek through the oven window if needed.
