Growing up in Lebanon, I have always been surrounded by fresh, seasonal ingredients and bold flavors. I inherited my love of cooking and experimenting with new recipes from my mother and grandmother, who spent countless hours in the kitchen perfecting their favorite dishes. While Brussels sprouts aren’t exactly a staple in Lebanese cuisine, I believe in the power of bringing together different flavors and creating something unique.

The origins of miso maple roasted Brussels sprouts are a bit of a mystery. Some say it’s an Asian-inspired recipe, while others argue that it’s a modern twist on classic American cuisine. What we do know is that this dish has taken the food world by storm, with chefs and food bloggers putting their own spin on it. I like to think that miso and maple syrup were meant to be together – the salty, umami flavor of the miso compliments the sweetness of the maple syrup perfectly. And when combined with garlic and black pepper – well, let’s just say that your taste buds will thank you!

Miso paste

As a lover of all things umami, I can’t get enough of miso paste. Made from fermented soybeans, this flavorful paste adds a depth of savory flavor to any dish it touches. Not only is it delicious, but it’s also a source of protein and probiotics, making it a healthy addition to any diet. In this recipe, the miso paste is combined with maple syrup to create a sweet and salty glaze that perfectly complements the roasted Brussels sprouts. If you’ve never used miso paste before, I highly recommend giving it a try. It’s a versatile ingredient that can be used in everything from salad dressings to marinades to soups.

What to serve it with?

I absolutely love serving miso maple roasted Brussels sprouts with a warm bowl of quinoa. The soft, nutty flavor of quinoa pairs perfectly with the crispy, caramelized Brussels sprouts. Plus, it’s a complete plant-based protein and a great source of fiber. I find that the slight bitterness of the quinoa balances out the sweetness of the maple glaze, creating a well-rounded and satisfying meal. Not to mention, this dish is also vegan and gluten-free, making it an excellent option for those with dietary restrictions. Trust me, once you give this combo a try, you’ll wonder how you ever ate Brussels sprouts any other way!
