Ingredients:

  • Udon Noodles – Thick and chewy, udon noodles are the star of this dish. They absorb the flavors of the sauce and provide a satisfying texture. If you can’t find udon noodles, you can use soba or even spaghetti as a substitute.
  • Oyster Mushrooms – Sautéed oyster mushrooms add a meaty texture and a subtle umami flavor to the dish. If oyster mushrooms are not available, you can use shiitake mushrooms as a replacement.
  • Garlic – Garlic infuses the noodles with a strong and aromatic flavor. It adds depth and complexity to the dish. If you’re not a fan of garlic, you can reduce the amount or omit it.
  • Soy Sauce – Soy sauce provides the salty and savory base for the sauce, enhancing the flavors of the noodles and mushrooms. You can use low-sodium soy sauce if you prefer.
  • Sesame Oil – Sesame oil adds a nutty and rich flavor to the dish. It also helps to bring all the flavors together. If you don’t have sesame oil, you can use olive oil as a substitute.
  • Green Onions – Green onions provide a fresh and mild onion flavor. They add a pop of color and a crunchy texture to the dish. If you don’t have green onions, you can use chives as a replacement.
  • Sesame Seeds – Toasted sesame seeds add a subtle nutty flavor and a crunchy texture. They are a garnish that adds visual appeal and a delightful finishing touch. If you don’t have sesame seeds, you can omit them or use crushed peanuts instead.
  • Red Pepper Flakes – Red pepper flakes add a hint of heat and spice. You can adjust the quantity according to your preference for spiciness. If you don’t like spicy food, you can omit the red pepper flakes.
  • Vegetable Broth – Vegetable broth provides a savory and flavorful base for the sauce. It adds depth and richness to the dish. If you don’t have vegetable broth, you can use chicken broth as a substitution.
