They’re also packed with healthy monounsaturated fats and antioxidants. Kalamata olives are a great addition to this avocado pesto pasta, providing a briny and savory taste that balances out the creaminess of the sauce. I love using them in salads, dips, and pasta dishes. They’re also great on their own as a snack or appetizer. Just be careful not to eat too many at once – they can be addictive!

What to serve it with?

When I make this creamy avocado pesto pasta with cherry tomatoes and feta cheese, I love to serve it with a crisp and refreshing green salad on the side. Ingredients
  

  • 1 large or 2 small Avocado
  • 2 Garlic Cloves
  • 1/2 cup Fresh Basil Leaves
  • 1/4 cup Pine Nuts
  • 1/4 cup Grated Parmesan Cheese
  • 1/4 cup Olive Oil
  • To taste Salt
  • To taste Black Pepper
  • 12 oz Pasta
  • 1 cup, halved Cherry Tomatoes
  • 1/2 cup, crumbled Feta Cheese
  • 1/2 cup, pitted and sliced Kalamata Olives

Instructions
 

  • Cook the pasta – Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.
  • Make the avocado pesto – In a food processor, combine the avocado, garlic, basil, pine nuts, Parmesan cheese, olive oil, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.
  • Toss the pasta with the avocado pesto and add the toppings – In a large bowl, toss the cooked pasta with the avocado pesto until well coated. Add the cherry tomatoes, feta cheese, and olives to the bowl, and toss gently to combine.
  • Serve and enjoy! – Transfer the pasta to a serving dish and garnish with additional Parmesan cheese and fresh basil leaves, if desired. Serve the pasta immediately and enjoy!
