Ingredients
  

  • 2 cups, peeled and diced Mango
  • 2 cups, peeled and diced Kiwi
  • 2 cups Greek Yogurt
  • 2 tablespoons Honey
  • 1 cup Granola

Instructions
 

  • Prepare the fruits - Peel and dice the mangoes and kiwis into small cubes. You can use frozen fruit if you cannot find fresh ones, but let them thaw before using them. Set aside. - Make sure the fruits are ripe but not overripe, as they should be sweet and firm. You can try with other tropical fruits such as pineapple, papaya, or passionfruit, for a different flavor profile. You can also add some lime or lemon juice to the fruits to prevent browning.
  • Mix the Honey and Greek Yogurt together - In a small bowl, whisk the honey and Greek yogurt together until well combined. - Adjust the amount of honey to your liking, depending on how sweet you want the parfait to be. You can also use flavored Greek yogurt, such as vanilla or coconut, for a twist.
  • Layer the parfait - Take four clear glasses, and start layering the parfait in the following order: 1) a spoonful of the yogurt mixture, 2) a layer of mangoes, 3) another spoonful of yogurt, 4) a layer of kiwis, 5) another spoonful of yogurt, and 6) a layer of granola. Repeat the layers until you fill the glasses or run out of ingredients. - Use a piping bag or a spoon to layer the yogurt neatly, making sure it covers the edges of the glass. Tap the glasses gently on the counter to settle the layers and remove any air bubbles. You can use any type of granola, or make your own by mixing rolled oats, nuts, seeds, and honey and baking in the oven.
  • Serve and enjoy - Garnish the parfait with some extra fruit and granola on top, and serve immediately. Enjoy the sweet and refreshing taste of the global connection! - You can keep the parfait in the fridge for up to 2-3 hours before serving, but not for too long or it will become soggy.
