  • 2 slices Whole Grain Bread
  • 1 large Avocado
  • 1/2 cup Strawberries
  • 1 tablespoon Balsamic Vinegar
  • 1 teaspoon Honey
  • 1/4 cup Goat Cheese
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper

Instructions
 

  • Toast the Bread - Toast the bread in a toaster until desired degree of toasting is achieved.
  • Mash the Avocado - Cut the avocado in half and remove the pit. Using a fork, mash the flesh of the avocado in a small bowl. - For best results, use a ripe avocado that yields to gentle pressure. If it's not ripe enough, it will be hard to mash. If it's too ripe, it will be too soft and may not look as appetizing.
  • Make the Balsamic Glazed Strawberries - In a small saucepan or microwave-safe bowl, combine the balsamic vinegar and honey. Heat over low heat or microwave for 20 seconds. Stir until well combined. Add the strawberries and stir to coat. Cook over low heat or microwave for 30 seconds, stirring occasionally, until the strawberries are glazed and slightly softened. - Be careful not to overcook the strawberries, or they will become mushy. The glaze will thicken as it cools.
  • Assemble the Avocado Toast - Spread the mashed avocado onto the toasted bread. Sprinkle with salt and black pepper to taste. Top with the balsamic glazed strawberries and crumbled goat cheese. - You can also sprinkle a handful of chopped nuts, like almonds or walnuts, on top for added crunch and flavor.
