Instructions
 

  • Preheat the oven and prepare the sweet potato rounds - Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Slice the sweet potato into rounds, about 1/4 inch thick. In a small bowl, mix together the smoked paprika, garlic powder, salt, and pepper. Drizzle the sweet potato rounds with olive oil and sprinkle with the spice mixture, making sure they are evenly coated.
  • Bake the sweet potato rounds - Place the sweet potato rounds on the prepared baking sheet and bake for 20-25 minutes, or until crispy and golden brown. Flip the sweet potato rounds halfway through cooking to ensure even browning.
  • Toast the bread and mash the avocado - While the sweet potato rounds are baking, toast the bread slices in a toaster until crispy. In a small bowl, mash the avocado with a fork until it's smooth and creamy. Season with salt and pepper to taste.
  • Assemble the Sweet Potato Avocado Toast - Once the sweet potato rounds are done baking, assemble the toast by spreading the mashed avocado on top of the toasted bread slices. Place the crispy sweet potato rounds on top of the avocado, and season with additional salt and pepper to taste.
