As a vegetarian, I’m always looking for new and exciting plant-based protein sources, and Beyond Beef crumbles definitely fit the bill. As someone who grew up eating a lot of rice and beans, this side option is near and dear to my heart. Ingredients
  

  • 1 package (12 oz) Beyond Beef Crumbles
  • 8 Corn Tortillas
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Salt
  • 1 Bell Pepper
  • 1/2 Onion
  • 2 cloves Garlic
  • 1 Avocado
  • 2 tablespoons Lime Juice
  • 1/4 cup Cilantro

Instructions
 

  • Prepare the Beyond Beef Crumbles - Heat a large skillet over medium-high heat and add the olive oil. Once hot, add the Beyond Beef crumbles, cumin, chili powder, and salt. Cook for 5-7 minutes, stirring occasionally, until the crumbles are browned and crispy. -
  • Prepare the Vegetables - While the Beyond Beef crumbles are cooking, cut the bell pepper in half and remove the seeds and stem. Slice the pepper into thin strips. Peel and thinly slice the onion. Peel and mince the garlic. Set aside in a small bowl. -
  • Make the Avocado Sauce - Cut the avocado in half and remove the pit. Scoop the flesh into a small bowl. Add the lime juice and cilantro and mash with a fork or potato masher until creamy. - If you have a food processor or blender, you can use it to make the sauce instead. Just blend the avocado, lime juice, and cilantro until smooth and creamy.
  • Warm the Tortillas - Heat a small skillet over medium heat. Place a tortilla in the skillet and cook for 20-30 seconds on each side, until heated through and slightly crispy. Repeat with the remaining tortillas. - If you have a gas stove, you can also warm the tortillas directly over the flame. Use tongs to hold the tortilla and cook for a few seconds on each side, until lightly charred and warm.
  • Assemble the Tacos - To assemble the tacos, place a spoonful of the Beyond Beef crumbles in the center of each tortilla. Top with the sliced bell pepper, onion, and minced garlic. Drizzle the avocado sauce over the top. Serve immediately. - Feel free to customize the tacos to your liking! You could add shredded lettuce, diced tomatoes, or your favorite hot sauce.
